Sinantomas is a Filipino dish that is often mistaken as kaldereta because it has many similarities with the latter.
You may be thinking that this recipe is something that will make the identification of similar Filipino dishes like kaldereta, menudo, and afritada even more difficult; but worry not because the recipe can be easily distinguished and is actually a lot different from any other Filipino food once you get to taste and identify its ingredients.

Sinantomas is a pride of Quezon province, just like the local version of the worldwide famous dish known as braised beef, except the Quezonian version includes tomato sauce (or ketchup) and spareribs. Then add in the slices of potatoes and its other flavorings like soy sauce, pineapple juice, and delectable cheese to complete the recipe.
How to Cook Sinantomas
- Marinate the pork spare ribs with pineapple juice, soy sauce, banana ketchup, salt and pepper. Put it inside the fridge for at least 2 hours or overnight.
- In a pan over medium heat, add the oil and pan-fry the potatoes until lightly brown. Remove from the pan and set aside.
- Sauté the onion and garlic until the onions are translucent. Add the marinated pork spare ribs without the liquid. Cook for 7-10 minutes or until tender.
- Pour the marinate liquid and water. Put back the potatoes, continue to cook until the liquid is reduced.
- Add in the frozen green peas and shredded cheese. Let it simmer until the sauce thickens.

Ingredients
- 450 g pork spare ribs cut into serving pieces
- ½ cup pineapple juice unsweetened
- ¼ cup soy sauce
- 2 tbsp banana ketchup
- ½ tsp salt
- ½ tsp ground black pepper
- ¼ cup vegetable oil
- 2 medium potatoes cut into serving pieces
- 1 medium onion chopped
- 3 cloves garlic minced
- ½ cup water
- ⅓ cup frozen green peas
- ½ cup shredded cheese
Instructions
- In a bowl, combine pork spare ribs with pineapple juice, soy sauce, banana ketchup, salt and pepper. Put inside the refrigerator and marinate for at least 2 hours or overnight.
