Ingredients
450gpork spare ribscut into serving pieces
½cuppineapple juiceunsweetened
¼cupsoy sauce
2tbspbanana ketchup
½tspsalt
½tspground black pepper
¼cupvegetable oil
2mediumpotatoescut into serving pieces
1mediumonionchopped
3clovesgarlicminced
½cupwater
⅓cupfrozen green peas
½cupshredded cheese
Instructions
In a bowl, combine pork spare ribs with pineapple juice, soy sauce, banana ketchup, salt and pepper. Put inside the refrigerator and marinate for at least 2 hours or overnight.
In a pan over medium heat, add the oil and pan-fry the potatoes until lightly brown. Remove from the pan and set aside.
Reduce the oil then sauté the onion and garlic until the onions are translucent. Add the marinated pork spare ribs without the liquid. Cook for 7-10 minutes or until the meat is tender.
Add the marinate liquid and ½ cup water. Put back the potatoes, continue to cook until the liquid is reduced.
Add in the frozen green peas and shredded cheese. Let it simmer until the sauce thickens. Transfer in a serving bowl and enjoy!
