Ingredients
1tbspvegetable oil
1mediumonionchopped
3clovesgarlicminced
300gchicken breast filletskinless, boneless, cut into strips
1cupbroccoli florets
1mediumcarrotssmall diced
2eggslightly beaten
2cupswhite ricecooked
1 ½tbspsoy sauce
1tbspfish sauce
1tbsptamarind paste
salt and pepper
spring onionchopped, for garnish
Instructions
In a wide pan or large wok over medium heat. Put the vegetable oil. Sauté the onion and garlic until softened and aromatic.
Add the chicken breast fillet and cook for 5 minutes until the color change into white.
Put the broccoli and carrots and continue to cook for another 3 minutes.
Pour the beaten eggs and cook for another minute. Add the cooked rice and season it with soy sauce, fish sauce, tamarind paste, salt, and pepper. Stir until the color is even. Sprinkle the chopped spring onion and serve immediately.
