Ingredients
⅓cupcooking oil
2largepotatoespeeled and cut into 2-inch cubes
1largecarrotspeeled and cut into 2-inch cubes
1mediumonionchopped
3clovesgarlicminced
1kgBeef Round or Chuckcut into 2-inch cubes
1 ½ cuptomato sauce
2cupswater
2tbsptomato paste
85gliver spread
12pcsgreen olivespitted
1smallred bell peppercut into cubes
1smallgreen bell peppercut into cubes
1cupcheesegrated
salt and pepper to taste
Instructions
In a wide pan over medium heat, add the cooking oil and pan-fry the potatoes and carrots until lightly brown. Drain excess oil with paper towel and set aside.
Reduce cooking oil to 1 ½ tbsp and sauté the garlic and onion until soft and translucent. Add the beef, stir occassionallyand cook until lightly brown.
Pour the tomato sauce and water. Cover with the lid and change it to low heat. Cook for 1 ½ hours or until the meat is tender. Add more water when necessary.
Add the tomato paste, stir until well blended. Put the bell peppers, green olives, liver spread and stir well. Season with salt and pepper. Let it cook for another 3 minutes.
Lastly, add the potatoes, carrots and grated cheese. Stir thoroughly and cook for another 2 minutes. The sauce will be rich and thick. Transfer into a serving bowl and serve with hot steamed rice. Enjoy!
