  • 4 medium eggs separated
  • ¼ tsp cream of tartar
  • 3 tbsp greek yogurt


  • Pre-heat the oven at 150°C and prepare a baking tray lined with parchment paper.
  • Separate the egg whites and egg yolks. In a bowl with egg white, add cream of tartar. Using a hand-held electric mixer, beat the egg white at medium speed for 3-4 minutes or until soft peaks form.
  • In another bowl, combine the egg yolks and yogurt. Mix until well blended. Gradually fold the meringue into the egg yolk mixture.
  • Scoop the batter and place it in the prepared baking tray, leaving at least 2 inches from each other. Flatten the top using a spatula. Bake for 25-30 minutes or until golden brown.
