Ingredients

  • 1 tbsp vegetable oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 300 g chicken breast fillet skinless, boneless, cut into strips
  • 1 cup broccoli florets
  • 1 medium carrots small diced
  • 2 eggs lightly beaten
  • 2 cups white rice cooked
  • 1 ½ tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp tamarind paste
  • salt and pepper
  • spring onion chopped, for garnish

Instructions

  • In a wide pan or large wok over medium heat. Put the vegetable oil. Sauté the onion and garlic until softened and aromatic.

  • Add the chicken breast fillet and cook for 5 minutes until the color change into white.

  • Put the broccoli and carrots and continue to cook for another 3 minutes.

  • Pour the beaten eggs and cook for another minute. Add the cooked rice and season it with soy sauce, fish sauce, tamarind paste, salt, and pepper. Stir until the color is even. Sprinkle the chopped spring onion and serve immediately.
