Ingredients
1pork knuckle
2cupswater
1cupsoy sauce
1mediumonionchopped
6tbspbrown sugar
2pcsstar anise
1tbsppeppercorn
2pcspork cubesor use pork stock instead of water
2pcschorizo de bilbaosliced
15pcsswiss brown mushrooms
5pcshard-boiled eggs
1bunchbaby bok choy
Instructions
Clean and rinse the pork leg or pork knuckle under cold running water. Pat dry.
Using a pressure cooker, put the pork knuckle and add water, soy sauce, onion, brown sugar, star anise, peppercorn and pork cubes. Cover the pressure cooker with the lid and cook for 30-35 minutes over medium heat. Turn off the heat and let it stand for 10 minutes to release the pressure.
Add the chorizo de bilbao, mushrooms and boiled eggs. Cover and cook for another 3-5 minutes.
Lastly, add the baby bok choy and simmer for 3 minutes. Transfer in a serving dish and enjoy!
