Ingredients
1canspamcut into small dice
1smallcarrotdiced
3stalkspring onionchopped
4-6pcseggs
2largeeggplant
salt and pepper to taste
cooking oilfor frying
Instructions
Cut the large eggplants into a ring. Soak it with cold water to avoid discoloration.
Meanwhile, open a can of spam and cut it into small dice.
Using a spoon or cookie cutter, remove the middle of the eggplant to make space for the stuffing. It should look like a ring.
Cut the scrap eggplant into a dice and combine it with the spam. Add carrots, spring onion, egg, flour, salt and pepper. Mix until well combined.
In a pan over medium heat, add and heat the cooking oil. Place 3-4 eggplant ring then put the stuffing in the middle. Cook for 3 minutes on each side. Remove from the pan and drain excess oil in paper. Best serve with aioli or mayo ketchup.
