Ube Bars are made of baked sweet bread dipped with ube syrup, tossed in dessicated coconut.

  • ½ cup water
  • ½ cup sugar
  • 2 ½ cup all-purpose flour
  • ¼ cup powdered milk
  • ½ tbsp baking powder
  • ½ tsp salt
  • cup vegetable shortening
  • ½ cup ube jam
  • 1 cup dessiccated coconut

Ube Syrup

  • cup water
  • ½ cup sugar
  • 1 tsp ube flavoring


  • Preheat oven to 180C. Prepare 9" square pan, line with parchment paper.
  • Combine water and sugar. Stir until well dissolved. In a bowl, whisk flour, powdered milk, baking powder and salt.

  • Add the vegetable shortening and ube jam. Pour sugar water and mix until well incorporated. Transfer the mixture into the prepared pan. Bake for 20-30 minutes.

  • To prepare the ube syrup, combine water, sugar and ube flavoring. Stir until sugar is well dissolved.

  • When the cake is ready, allow it to cool then cut into 2inch rectangle bars. Dip each piece into the ube syrup then toss it desiccated coconut.
