Inununan is the Visayan version of paksiw. Fish is cooked with vinegar and some vegetables such as eggplant, okra and green thai chili.

Ingredients
2pcsTuna Mackerelor any fish of your choice
2clovesgarlicminced
1mediumonionsliced
1thumb-sizegingersliced
1tbspvegetable oil
4pcsokra
2pcsgreen thai chili
½cupvinegar
¼cupwater
1tspsalt
1tspground black pepper
Instructions
In a large wok or pan, combine the fish, onion, garlic, ginger, green chili, eggplant, okra, salt and pepper. Pour the vinegar and water then turn on the stove to medium low heat.
Cover with the lid and simmer for 15-20 minutes or until cook. Add more water when necessary. Turn off the heat and transfer to a serving plate. Enjoy with hot steamed rice.
