Inununan is the Visayan version of paksiw. Fish is cooked with vinegar and some vegetables such as eggplant, okra and green thai chili.

Ingredients

  • 2 pcs Tuna Mackerel or any fish of your choice
  • 2 cloves garlic minced
  • 1 medium onion sliced
  • 1 thumb-size ginger sliced
  • 1 tbsp vegetable oil
  • 4 pcs okra
  • 2 pcs green thai chili
  • ½ cup vinegar
  • ¼ cup water
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions

  • In a large wok or pan, combine the fish, onion, garlic, ginger, green chili, eggplant, okra, salt and pepper. Pour the vinegar and water then turn on the stove to medium low heat.
  • Cover with the lid and simmer for 15-20 minutes or until cook. Add more water when necessary. Turn off the heat and transfer to a serving plate. Enjoy with hot steamed rice.
