Instructions
Pre-heat oven at 180°C or 356°F. Line a 12-cup muffin pan with cupcake liners and set aside.
In a large bowl, sift and combine the flour, cocoa powder, baking powder, baking soda and salt. Whisk until well combined.
Using a separate bowl, mix the sugars, vegetable oil, eggs and vanilla extract. Combine the dry ingredients and sugar-egg mixture. Pour the buttermilk and mix toroughly until combined but do not overmix.
Scoop the batter into the cupcake liners about half-full. Bake for 18 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool completely before frosting.
To prepare the cream cheese frosting, use a large bowl and beat the butter and cream cheese together. Add the icing sugar and vanilla extract. Continue to beat for another 30 seconds or until well blended.
Transfer into a piping bag with a star tip and decorate your cupcakes. For a variation, you can add food coloring or 2 tsp cocoa powder for an ultimate chocolate frosting. Put some candy sprinkle on top and serve.
