Ingredients
1tbspcooking oil
3clovesgarlicchopped
1smallonionchopped
6pcsokrasliced
½tspsalt
½tspblack pepper
3pcseggs
2tbspflour
Instructions
In a pan over medium heat, add some cooking oil and sauté the garlic and onion.
Add the okra until slightly tender. Transfer in a bowl and let it cool for 5 minutes.
Add the salt, pepper, eggs and flour. Mix thoroughly.
In a pan over medium heat, place ½ cup of the okra omelet mixture forming a round patty leaving ½ inch apart. Cook for 2-3 minutes on each side or until golden brown.
Remove from the pan and drain excess oil. Serve and enjoy!
