Ingredients
250gtunaor mackerel
1mediumeggplant
2clovesgarlic
½tspsalt
1tspblack pepper
½cupvinegar
200mlcoconut milk
¾cupwater
Instructions
Heat a pan or wok in medium fire.
Pour some cooking oil.
Sauté the garlic and onion.
Add the fish and black pepper.
Put the salt.
Pour the vinegar and avoid stirring for 2-3 minutes.
Add some water and simmer for 1 minute.
Add the eggplant and cook for 5-7 minutes.
Put the coconut milk and cook for another 2-3 minutes.
