Filipino Style Chicken Curry is a spicy hot dish which is usually served by many not only during fiestas but also on family occasions like birthdays, anniversaries, and even on simple family gatherings.
In a wide pot over medium heat, add the cooking oil. Sauté the garlic and onion until soft and translucent. Add the chicken and cook for 7-10 minutes until lightly brown. Stir occasionally.
Add the fish sauce and mix well. Pour the coconut milk and water. Cover with the lid and simmer for 20 minutes or until the chicken is cook.
Add the carrots, potatoes, red bell pepper and green bell pepper. Simmer for another 5-7 minutes or until the vegetables are tender. Add the curry powder and mix well. You may adjust the amount of curry powder depending on how spicy you want it to be.
Season with salt and pepper. Transfer into a serving bowl and serve with hot steamed rice.
