Ingredients
½cupwater
½cupsugar
2 ½cupall-purpose flour
¼cuppowdered milk
½tbspbaking powder
½tspsalt
⅓cupvegetable shortening
½cupube jam
1cupdessiccated coconut
Ube Syrup
⅓cupwater
½cupsugar
1tspube flavoring
Instructions
Preheat oven to 180C. Prepare 9" square pan, line with parchment paper.
Combine water and sugar. Stir until well dissolved. In a bowl, whisk flour, powdered milk, baking powder and salt.
Add the vegetable shortening and ube jam. Pour sugar water and mix until well incorporated. Transfer the mixture into the prepared pan. Bake for 20-30 minutes.
To prepare the ube syrup, combine water, sugar and ube flavoring. Stir until sugar is well dissolved.
When the cake is ready, allow it to cool then cut into 2inch rectangle bars. Dip each piece into the ube syrup then toss it desiccated coconut.
