Bopis is a spicy FIlipino dish made of pork or cow's lung and other innards. It is chopped finely then sautéed with onion, garlic, red and green bell pepper and carrots.

Ingredients
1kgpork lungs
1thumb-sizeginger
1stalklemongrass
1tbsppeppercorn
4pcsbay leaves
¼cupvinegar
1tbspcooking oil
1mediumonionchopped
3clovesgarlicminced
3tbspvinegar
3tbspsoy sauce
3tbspannatto seeddiluted in ½ cup water
1smallred bell pepperfinely chopped
1smallgreen bell pepperfinely chopped
1largecarrotsfinely chopped
3pcsred chili
salt and pepper to taste
Instructions
In a large pot, pour about 2-3 liters water. Put the pork lungs then add the aromatics such as ginger, lemongrass, peppercorn, dried bay leaves and vinegar. Cook for 30-45 minutes or until tender. Drain the liquid and chop finely.
In a wide skillet, sauté the onion and garlic until soft and fragrant. Add the minced pork lungs and stir. Pour the vinegar, do not stir and let it simmer for 5 minutes.
Pour the annatto liquid and continue to cook for 20 minutes or until the liquid is almost absorbed. Add the carrots, red and green bell pepper. Stir then cook until the vegetables are soft.
Add the red chili. Season with salt and pepper according to your taste preference. Serve immediately with steamed rice.
