Filipino Hotcake brings back many memories from my childhood. I always bought this thin, soft and fluffy hotcake from the Manong you sell it outside our school. I tried making it for my kids and surprisingly they love it too.

Ingredients
1cupall-purpose flour
¼tspsalt
1tspbaking powder
¼cupwhite sugar+ 2 tbsp for dusting
1cupmilk
1largeegg
1tbspvegetable oil
¼tspyellow food coloring
¼cupbutteror margarine
Instructions
In a large bowl, mix together the flour, salt, baking powder, ¼ cup white sugar. Make a well in the middle and add the milk, egg, vegetable oil and yellow food coloring. Mix well until well blended.
Heat a lightly greased non-stick pan over medium heat. Scoop about ¼ cup of the batter into the pan. When the bubbles start to appear, flip the hotcake and cook for another 2 minutes.
Remove from the pan and immediately spread butter or margarine on each hotcake. Then, sprinkle some sugar on top. Serve hot and enjoy!
