Ingredients
1 ½cupself-raising flour
1 ½tspbaking powder
1 ¼cupgranulated white sugar1 cup for the batter + ¼ cup for the meringue
1 ¼cupfresh milk
5pcsegg whites
½tspcream of tartar
1pcsalted duck egg
½cupgrated cheese
Instructions
In a bowl, sift and combine the flour, baking powder and sugar. Add the milk and mix until well combined.
In a separate bowl, beat the egg whites using a hand-held mixer. Add the cream of tartar and continue to beat at low speed until frothy and pale white. Gradually add the sugar and beat at medium speed until soft peaks form.
Fold ⅓ of the meringue into the batter then immediately fold the remaining meringue until no streaks remain.
Prepare a 9-inch round pan and grease with melted butter or vegetabl oil. Pour the batter into the pan then add the sliced salted duck eggs and grated cheese.
Place in a steamer basket over boiling water. Steam for at least 20-25 minutes or until a toothpick comes out clean when inserted. Don't forget to put a cheesecloth or tea towel on the lid to avoid water from coming into the cake.
Remove the cake from the steamer and let it cool for 15 minutes. When cool, run a knife on the side to loosen the cake from the pan. Serve and enjoy!
