Ingredients
500gchicken thigh filletskinless and boneless, sliced
½cuppineapple juiceunsweetened
2tbspsoy sauce
1tspsalt
1tspground pepper
1headgarlicminced
¼cupbrown sugar
3dropsred food coloringoptional
1tbspcooking oil
Instructions
In a bowl, combine the chicken thigh fillet, garlic, brown sugar, pepper, salt, soy sauce and pineapple juice. Add red food coloring or banana ketchup. Mix thoroughly and marinate for at least an hour or overnight.
Heat a pan over medium heat and put the marinated chicken including juice. Let it cook until the liquid evaporate and the chicken is tender.
Add some cooking oil and pan-fry for about 3-5 minutes.
