Ingredients

  • 500 g chicken thigh fillet skinless and boneless, sliced
  • ½ cup pineapple juice unsweetened
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 head garlic minced
  • ¼ cup brown sugar
  • 3 drops red food coloring optional
  • 1 tbsp cooking oil

Instructions

  • In a bowl, combine the chicken thigh fillet, garlic, brown sugar, pepper, salt, soy sauce and pineapple juice. Add red food coloring or banana ketchup. Mix thoroughly and marinate for at least an hour or overnight.
  • Heat a pan over medium heat and put the marinated chicken including juice. Let it cook until the liquid evaporate and the chicken is tender.
  • Add some cooking oil and pan-fry for about 3-5 minutes.
  • Serve with garlic fried rice and fried egg.
