Ingredients
1mediumonionhalf chopped, half cut into rings
2mediumtomatoone sliced, one chopped
1thumb-sizegingerchopped
2lbtilapiascaled and gutted
2tbspbutter
1salted egg
salt and pepper to taste
Instructions
Pre-heat oven at 170° C for 10 minutes.
Prepare the stuffing by chopping or slicing the tomatoes, onion and ginger. Combine the chopped ingredients and set aside.
Wash and clean the Tilapia well. Pat dry and make three slit across the body of the fish on both sides.
Stuff the fish with onion-tomato mixture. Season the fish by rubbing salt and pepper.
Place the aluminum foil in a flat surface and arrange the butter, sliced salted egg, tomato and onion. Put the fish on top and arrange again the butter, salted egg, tomato and onion.
Wrap the fish with aluminum foil and fold the edges to seal. You may double wrap to prevent the juice from leaking.
Place the wrapped fish in a baking tray and bake it for 20 minutes or until the fish is cooked well. Serve with soy-calamansi dipping sauce.
