Ingredients

  • 1 medium onion half chopped, half cut into rings
  • 2 medium tomato one sliced, one chopped
  • 1 thumb-size ginger chopped
  • 2 lb tilapia scaled and gutted
  • 2 tbsp butter
  • 1 salted egg
  • salt and pepper to taste

Instructions

  • Pre-heat oven at 170° C for 10 minutes.
  • Prepare the stuffing by chopping or slicing the tomatoes, onion and ginger. Combine the chopped ingredients and set aside.
  • Wash and clean the Tilapia well. Pat dry and make three slit across the body of the fish on both sides.
  • Stuff the fish with onion-tomato mixture. Season the fish by rubbing salt and pepper.
  • Place the aluminum foil in a flat surface and arrange the butter, sliced salted egg, tomato and onion. Put the fish on top and arrange again the butter, salted egg, tomato and onion.
  • Wrap the fish with aluminum foil and fold the edges to seal. You may double wrap to prevent the juice from leaking.
  • Place the wrapped fish in a baking tray and bake it for 20 minutes or until the fish is cooked well. Serve with soy-calamansi dipping sauce.
