Ampalaya or bitter gourd is undeniably very bitter in taste. It is actually and obviously avoided by many especially children. The appearance of this vegetable is not good looking also.

Heat a pan and add some cooking oil.
Saute the garlic, onion and tomatoes.
Add the bitter gourd or ampalaya.
Add the salt.
Beat the eggs and pour it on the pan.
Stir until the eggs are cooked.
Serve.
