    Stuffed Eggplant Rings with Spam is the improved version of the Filipino favorite tortang talong. So if you’re tired of the same old torta, how about adding a little more twist to it? Just like this recipe that I’m about to share with you.

    Try checking your kids’ reaction after telling them that their lunch or baon will be tortang talong. Are they excited? If not, you need to up your game. They’re probably too used to it too. It means they want to eat something new this time. Thus, I thought of this simple stuffed eggplant rings with spam recipe that anyone can follow. Plus, it contains additional ingredients that kids are known to love.

    Getting large eggplants may be a little challenging this time. Since the eggplants sold in the Philippines are usually slim. Try checking the supermarket as they sometimes sell talong in unique sizes.

    Spam, the new favorite breakfast of many Filipinos, can be bought in almost every local supermarket. Also, there is a new variant being sold in the market called Prem. It tastes similar and a little cheaper than Spam.

    Of course, we still want it to be as healthy as possible. Let’s add more vegetables like carrots and spring onion.

    Eggs will act as a glue for the other ingredients. Without it, the stuffing will fall apart. But at the same time, it will add flavor.

    Salt and pepper for the savory and salty taste. Then cooking oil will be used for frying. I personally prefer olive oil so I used it for this recipe.

    The good thing about this dish is that you can actually experiment. Try mixing and matching different vegetables. Or maybe you want to try putting canned Vienna sausage instead of Spam. Or add some corn to the stuffing. Feel free to use any ingredient that you like.

    How to make this appetizing stuffed eggplant rings with spam

    Cut the large eggplants crosswise. Each cut piece resembles a ring. Soak them in cold water to avoid discoloration. 

    While soaking the eggplants in water, open a can of Spam. Cut it into small diced cubes.

    Using a cookie cutter, remove the middle part of the eggplant. This is to make space for the stuffing. Here they will completely look like a ring. If you don’t have a cookie-cutter, the best option is a spoon.

    Cut the removed eggplants into diced cubes and combine with the diced Spam. Add the minced carrots, chopped spring onion, egg, flour, salt, and pepper. Mix everything well.

    Prepare the stuffing

    Place a pan over medium heat. Add the cooking oil and heat for a few minutes. Put 3-4 eggplant rings into the pan then put the stuffing in the middle. Fry each side for 3 minutes.

    Once cooked, remove from the pan and drain excess oil in tissue paper. Then serve with dips like aioli or mayo ketchup. Enjoy!

    Ingredients
      

    • 1 can spam cut into small dice
    • 1 small carrot diced
    • 3 stalk spring onion chopped
    • 4-6 pcs eggs
    • 2 large eggplant
    • salt and pepper to taste

    • Cut the large eggplants into a ring. Soak it with cold water to avoid discoloration.

    • Meanwhile, open a can of spam and cut it into small dice.

    • Using a spoon or cookie cutter, remove the middle of the eggplant to make space for the stuffing. It should look like a ring.

    • Cut the scrap eggplant into a dice and combine it with the spam. Add carrots, spring onion, egg, flour, salt and pepper. Mix until well combined.

    • In a pan over medium heat, add and heat the cooking oil. Place 3-4 eggplant ring then put the stuffing in the middle. Cook for 3 minutes on each side. Remove from the pan and drain excess oil in paper. Best serve with aioli or mayo ketchup.
