Fried Chicken Ala Max Style is a copy-cat of the notable Chicken restaurants around the Philippines, and one of the names that stand out the most is Max’s Fried Chicken.
Max’s is a household name, as the restaurant first began its operations way back in 1945. After World War II, Maximo Gimenez opened a cafe to entertain the American troops stationed at Quezon City. Maximo’s niece, Ruby, created the special recipe of their fried chicken that instantly became a hit among the GI’s and the public. Thus, Max’s restaurant was born.
The restaurant is famously known for its crispy, tender, and flavorful fried chicken without any batter or breading. The secret lies within the juiciness and flavor of the chicken that seeps through the bone. Unlike other chicken dishes, Max’s chicken doesn’t come with brown gravy. Instead, it’s dipping sauce consists of a combination of banana ketchup and Worcestershire sauce.
How to Cook Fried Chicken Ala Max Style
This recipe is quite easy to replicate. However, this dish involves a lot of steps to ensure the quality of the chicken. In a large pot over medium heat, add the water, dried bay leaves, parsley, salt and pepper. Then, place the chicken in a steamer basket, steam the chicken for about 30 minutes or until tender. Remove from the steamer and allow it cool for 5 minutes. The chicken then undergoes a twice-frying process to achieve the crackling, crispy skin.
This is usually served at lunch or dinner as a meal viand with freshly-cooked rice. To those who are watching their dietary intake, you can substitute white rice with brown rice. If you prefer enjoying the meal without rice, you can consume the dish with a side of vegetables cooked to your preference for a healthier take.
Those on a protein diet can really enjoy this recipe. Although fried dishes are usually frowned upon by dieticians and health addicts, you can improve this recipe by frying your chicken in a healthy cooking oil such as pure olive oil, avocado oil.
