Ginisang Ampalaya is a very simple and easy to prepare dish. You can actually prepare this in a very minimal time. All you need is the bitter gourd, sliced thinly, spices like onions and garlics, tomatoes, beaten eggs, and ground pork. If you wanted your recipe to be eaten by your kids, add a lot of pork in it.
But still, the taste of ampalaya is still there. So, here’s what you should do to lessen that bitter taste. Slice the veggie in half, remove the seeds and the white part of the ampalaya using a spoon. Apply generous amount of salt on it and rinse it after leaving it for let’s say three to five minutes.

Ingredients
- 1 medium onion
- 1 medium bitter melon
- 2 pcs eggs
- 1 medium tomato
- 4 cloves garlic
- ½ tsp salt
Instructions
- Heat a pan and add some cooking oil.
- Saute the garlic, onion and tomatoes.
- Add the bitter gourd or ampalaya.
- Add the salt.
- Beat the eggs and pour it on the pan.
- Stir until the eggs are cooked.
- Serve.
