Beef Morcon Recipe - This dish is mostly served during holidays, fiestas, and other special events. However, this dish can also be served during normal meals.
This recipe is not that easy to prepare, that is why the taste is really different and extraordinary because it is prepared with hard work and patience.
It uses the thigh part of the beef or a steak. Marinate it carefully with spices as they will add a mixture of flavor to the star of the dish, the beef. Some Beef Morcon has a sauce that adds extra flavor and taste to the dish, but some are dryly made such as Pork Morcon which is just partnered with a tomato ketchup for dipping.
This kind of dish requires a lot of preparation from marinating, frying, cutting, to folding. Yet, no matter how long the process is, everyone loves it and can’t wait to taste it. The taste of it is delicious, and the ingredients are mixed well into a unique flavor that will certainly make your stomach happy may it be with or without the rice.
My mom usually serve this dish to our family during Noche Buena or Christmas eve. It is one of my favorite Filipino cuisine. The beef is carefully cooked in a pot for a long period of time which makes the meat so tender that melts in your month. The sauce is so good and flavorful.

Beef Morcon Recipe
Ingredients
- 1 kg beef
- 25 g chorizo
- 3 pcs hotdogs
- 2 pcs hard boiled egg
- 1 large onion
- 1 tbsp black pepper
- 25 g pineapple chunks
- 4 pcs calamansi
- 20 g pickles
- 30 g sliced cheese
- ¼ cup tomato sauce
- ¼ cup soy sauce
Instructions
- Marinate the beef with soy sauce, black pepper and calamansi juice for 30 minutes.
- Put the meat in a large plate and stuff it with the hard boiled eggs, chorizo, hotdogs and pickles.
- Roll the meat neatly.
- Secure it with a string.
- Pour some water in a big pot and add the tomato sauce, soy sauce, pickles, onion, pineapple and cheese.
- Add in the prepared meat and ensure the meat is dip in the sauce, add some water if necessary.
- Turn the heat on and set it to medium.
- Cover and let it cook until the meat becomes tender (20 - 30 minutes)
